Most chilaquiles make me happy, even the ones that aren't as good as they should be, but none make me happier than the ones you get here -- a plate-spanning stack of stale tortilla chips smothered in a chile-laced verde topped with three large eggs that stream rivers of school bus-yellow yolk.
