Fate Brewing owner Mike Lawinski says Griffith brings "an ideal blend of innovation and expertise" to the brewery and restaurant, which will have five core beers along with an ever-changing rotation of seasonals, collaborations and special releases.

The change will allow Griffith to experiment with his beers much more than he has in the past because Fate will have more beer-storage tanks. "We will be able to collaborate with other breweries and with homebrewers...and to work with local chefs to design specific beers," he says. "Mike has done all the legwork and given me almost everything I could ever want in a brewery, and I get to run it. I'm really looking forward to that."
Over the past few years at Golden City, Griffith has become known for Evolution IPA and Stand Up Double IPA, along with seasonal releases like his pumpkin and Hatch green chile beers, as well as a gose. "I'm proud of all the beers I've made, and very few came out like I wasn't expecting," he says. "When people ask for them six months before they come out, you know you are doing okay."
When Fate opens in the 7,000-square-foot former Jose Muldoon's, it will have a ten-barrel brewing system and thirty tap lines, many of which will host guest beers. There will be seating for 230 people inside and 90 outside.
Lawinski, who began his career with the Big Red F restaurant group in 2002 and most recently served as operations manager for the beer-centric West End Tavern, has said he would like to bottle and distribute Fate's beer as well.
Fate is one of several new breweries planned for Boulder, including J Wells, Wild Woods and West Flanders, which is set to open on Monday.
