Another chance to indulge: Indulge Wine Bar

Now you can indulge yourself in Highlands Ranch, since Indulge Wine Bar will open its doors at 4 p.m. today, and then stay open seven days a week -- from 4-10 p.m. Monday-Thursday, from 4 p.m.-midnight Friday, from 11 a.m.-midnight Saturday, and from 11 a.m.-10 p.m. Sunday. And the hours aren't all that's ambitious here: In addition to offering more than two dozen wines by the glass and stocking more than a hundred full bottles -- including "30 under $30" -- Indulge will be serving lunch and dinner tapas, decadent desserts, and featuring live music on the weekends.

"Having lived in Highlands Ranch for more than a decade," explains Peter Fatianow, who owns Indulge with his fiance, Delinda Romero, "I knew there was a dining niche that was desperately underserved -- a local place with an upscale feel, great food and wine, and world-class music."

Indulge's executive sommelier and wine director is Sarah Almand, who will teach monthly wine education classes; the executive chef is Kristen Reisinger, formerly of the Grand Hotel on Mackinac Island, who's been busy exploring Colorado products to incorporate into the board. "The menu will change frequently," she explains, bringing a variety of new tastes in tapas."

In fact, just about the only thing that isn't new about Indulge is its name, since chef William Wahl opened his Indulge French Bistro in northwest Denver earlier this year. There's no connection between the two places, though, and there's definitely a lot of distance between them -- Indulge Wine Bar is located at 1601 Mayberry Drive in the Highlands Ranch Town Center, south of C-470.
