Opened in 2004 next to the original WaterCourse Foods (now the location for City, O' City), WaterCourse Bakery supplies baked goods to both its sister restaurants and beyond, including local farmer's markets. And it does it all 100 percent vegan and mostly gluten-free.
In WaterCourse's goodie basket will be its Scout cookie -- a vegan Samoa with sweet potato, coconut and a walnut cookie dipped in chocolate -- and the streusel-topped lemon bars, both of which appear on the bakery's regular menu.
New for DISH is a Palisade peach tart, with peaches from the Western Slope baked into a tart shell, topped with marscapone mousse and toasted almonds. "Many of our clients have no idea that all of our pastries are vegan," declares Letisha Steele, WaterCourse Bakery manager. "We take a lot of care in product development to ensure that we produce great-tasting pastries that just so happen to be plant-based."Watercourse's toothsome treats are just a few of the dozens of offerings you'll find at DISH, which runs from 12:30 to 3:30 p.m. on Sunday, September 7.
