This is Gold's first restaurant -- a dream she shared with her father since she was a child. With recent encouragement from close friends, she decided to make her dream a reality in the town where she grew up.Although she has traveled and lived all over the world since she first left Boulder to attend college in Minnesota, it was her time in Burgundy, France, that helped shape her vision for the wine bar. The proximity to superior products and the culture in Burgundy means that great food and wine are immediately available and aren't considered a luxury, she says, adding that her favorite bar in a small town in the wine-producing region was always teeming with winemakers. PMG gets its name from the French expression "pour ma gueule," which winemakers use to indicate the stash of wine they keep for themselves.
It's that spirit of affordable and available wines from small producers that she hopes to capture at PMG, bolstered by a small Italian-inspired menu from chef Salvatore Proia, whose Boulder experience includes time as John Platt's sous chef at Q's and head chef at the Bitter Bar. Although Proia grew up in an Italian-American family, his love for cooking Italian fare blossomed while at Roman's in Brooklyn. His menu changes regularly based on produce available locally and what will best complement available wines. The menu is small, with a handful of "snacks" -- a recent menu featured spot prawns with bottarga, fried summer squash and chickpea panelle -- with three each of first, mid and main courses. Proia's hand-made pastas, like tortellini and bucatini, feature prominently.
PMG is open from 4 p.m. to 11 p.m. every day except Tuesday. Wine events and classes will also be offered, so Gold suggests keeping an eye on PMG's Facebook page.
