100 Favorite Dishes: The Swiss at Über Sausage

The Swiss at Über Sausage
Über has been grinding its own sausage since 2012 — fifteen months after the joint opened on Colfax Avenue — and that includes the skinny veal-and-pork blend that's nestled into the signature sandwich called the Swiss. The sausage recipe and the spice blend that tops the sandwich come from an old family recipe, courtesy of co-owner Alex Gschwend's grandfather, a chef who moved from Switzerland to Denver in 1950. 

The fine grind and narrow gauge of the sausage brings it closer to hot dog territory, but the juicy, meaty flavor — absent nitrates and other preservatives — puts it firmly on sausage ground. And because the link is so skinny, Über lines up two on the split French baguette, which is slathered in spicy mustard and stuffed with clover sprouts and diced red onion. The secret spice blend lends a burst of curry flavor to the mix, giving a distinct international flair typical of Swiss street food.

The double-wide configuration makes for a robust and filling treat, but the fresh sprouts and unadulterated sausage rescue the Swiss from the realm of junk-food indulgence. With so few seats inside the counter-service hut, a seat on the Colfax-facing patio is the perfect perch for enjoying this European street-food classic.
