Cafe Chihuahua doesn't have a place in the pantheon of old-school green chile joints around town, nor is it new enough to attract the attention of trendy taco seekers. The family-run, rambling hacienda with the arched entryway and neon sign instead caters to residents of the nearby Harvey Park and College View neighborhoods — hardly destination zones for Denver's restaurant hoppers.
The menu, though, includes tacos that can compete with some of the city's finest street taquerias while also embracing comfort dishes from the Den-Mex playbook. You can get a bubbling caldera of magma-hued green chile with a roll of tortillas, or choose from any number of combo dishes smothered in the same. The pregnant burrito is the kitchen's calling card, featuring a ground-beef enchilada completely encased in a bean burrito.
The dish, sided with guacamole, sour cream, refried beans and steam-table Spanish rice, is a study in soft textures, with layers of fluffy flour tortilla, thin (almost dissolved) corn tortilla, and more beans to hold together the fine-grained beef at the core of the whole thing. It's a big plate for a big appetite; luckily, Cafe Chihuahua pours some even bigger margaritas and micheladas to quench the mounting heat from each bite. This is no elegant meal, for sure, but if you're a fan of the way Mexican food has evolved in our high-plains climate, you'll swoon over this baby.
