When last we checked in with chef Scott Parker, whose resume includes ten years at Table 6 and time at several Vail and Telluride restaurants, he was overseeing doughnut/sandwich ops at the Habit/Carbon dual doughnut dispensary and coffee house. That was nearly a year ago, though, and Parker has since moved on. Now he's got a new gig where he'll be able to exercise some of those creative breakfast muscles while also launching a new dinner program: Parker is executive chef at Four Friends Kitchen, the popular Stapleton eatery that opened in March of last year.
Parker is working on putting his own stamp to the Southern-inspired breakfast and lunch menus at Four Friends, adding new dishes while perking up customer favorites. Grits cooked overnight are still part of the breakfast program and the green-chile chicken cobbler, nearly a legend among Stapleton residents, still graces the lunch slate.
The chef will soon roll out a summertime rooftop dinner series, too, putting Stapleton's only restaurant rooftop to good use. Otherwise, Four Friends still plans to maintain its regular 6:30 a.m. to 2:30 p.m. hours.
Parker's other Colorado culinary credits include executive chef at the now-closed Session Kitchen on Old South Pearl and executive chef at San Sofia in Tellurida. He's also headed kitchens in Nantucket, Massachusetts during time away from Colorado.
