Patxi's Pizza

When Patxi Azpiroz decided he wanted to offer deep-dish Chicago-style pizza in California, he spent two years experimenting in his small San Francisco apartment. “That’s how we came up with our recipes – by doing things over and over again until everyone agreed on what their favorite sauce, dough and pizzas were,” he says. “We’ve been successful because I really do think we have the best pizza on the West Coast. The passion we have for people and our product is unparalleled, and I spend a lot of time in the kitchen teaching everyone how to make pizza.” Today, Azpiroz and his partner, Bill Freeman, have a half-dozen Patxi’s Pizza outlets in California, and in 2012 the chain moved into Colorado, opening a spot in Englewood and then one in Cherry Creek, where it serves up authentic Chicago pies – with wine and beer to wash everything down. “People in Denver tell me that they’re amazed – that they don’t just want our pizza, but they need our pizza,” Azpiroz says. “I like spreading the love.”
