Boulder’s Cuba Cuba Sandwicheria is the first child of Cuba Cuba Cafe & Bar, the Cuban restaurant that Kristy Socarras Bigelow opened in the Golden Triangle in 2001. A decade later, she was ready to create something a little less ambitious, the fast-casual Cuba Cuba Sandwicheria. “Every neighborhood needs Cuban cuisine,” says Socarras Bigelow. The menu here features quick versions of items that have been popular on the Cuba Cuba menu, as well as a special addition for Boulder: the Boulder Cuban, a playful vegetarian take on the classic Cuban sandwich. There’s also a traditional pressed Cubano and other sandwiches, as well as a selection of salads, and beef, chicken, pork and tempura-fish plates, all served with black beans and white rice, or fries and a citrusy slaw. You can even get mojitos, sangria and beer -- but they’re poured in the kitchen, because this colorful spot has no bar.
