In 2012, West Flanders Brewing moved into the former home of BJ'S Restaurant & Brewhouse on the Pearl Street Mall in Boulder. For two of the owners, it was like coming home: Brothers Mark and Chris Heinritz had been part-owners of Red Fish, a New Orleans-inspired brewpub that opened in 1996 on Pearl Street with Brian Lutz as brewmaster. Eventually, everyone moved on, and the brothers focused their attention on the Sink, their bar on the Hill. But when the BJ’s space opened up, Lutz and the Heinritz brothers reunited, and also signed on longtime restaurateur Barry Wolfman. “Make sure your seatbelt is buckled, because we are about to go on one hell of a ride!” promised Lutz. Today West Flanders Brewing Co. focuses on pairing its adventurous beers with its menu, which features inspiring, creative, modern takes on classic pub fare. There are five -- yes, five -- kinds of mac and cheese, an over-the-top burger made with ground Berkshire pork, a duck and prosciutto pizza and an enormous Moroccan-spiced lamb on the menu. Drink (and eat) up!
