No. 48: Carnitas from Araujo's
There are plenty of Mexican restaurants that pimp pig parts. Cruise up and down Federal Boulevard, stalk the taquerias on East Colfax, or head North to Thornton, and you'll find yourself surrounded by pig tongues, snouts, feet and intestines. But if you want to satiate your hedonistic urge for carnitas -- don't we all? -- then you'll want to christen the quarters at Araujo's , a humble little Mexican storefront that turns out carnitas every which way -- tucked into burritos, gorditas and tacos, and on their own, devoid of flourish, bathed in their own fat for hours and maximized with nothing more than the pungency of their own natural scent. They're pure pig, meaty and salty, with soft interiors and caramelized edges -- and they're deliriously delicious.
