Thursday, January 7

Learn how to make feta and queso at The Art of Cheese at Haystack Mountain Goat Creamery from 6:30 to 8:30 p.m. today. Students will be taught how to create Haystack's “dry-salted” recipe that won Reserve Champion ribbon at the Boulder County Fair in 2013, a marinated-herbed feta that won Grand Champion ribbon in 2014, and several versions of queso fresco. Since this class is the creamery's monthly Cheese for Charity Class, half of each $39 tuition charge will be donated to a worthy charity. Students get to nominate their favorite charity, and then the class will vote for the charity they feel deserves the contribution. Register and learn more here
