And then there's Brian Laird, who, last month, exited the kitchen at Sketch, where he was making his own pastas, to concentrate on other projects, including menu consulting in Winter Park, for De Antonio's Pizza & Pasta and consulting on the menu at the Armoury, which will be short, simple, sweet and sandwich-focused. "Brian is going to have five signature sandwiches, some charcuterie and some cheese plates," says Padro, adding that the sandwiches will all be named for popular Denver chefs. "We're going to ask some of Denver's best chefs what their favorite sandwiches are, and stick their names on them."
But while the menu is limited, Baehre insists that Laird, who won't have a hood in the small kitchen, will nonetheless make the food chef-driven. "We're really excited that one of the most talented chefs in this city -- someone of Brian's caliber -- will be doing the menu, and even though it's not a big menu, and we're not reinventing the wheel, Brian's execution is always perfect."
And Laird's dishes will be complemented by eight draft handles, some of which will be local, while others will be imports. The partners also plan to work closely with Colorado Rapids president Tim Hinchey to make the pub a central gathering hub for local soccer fiends, although Beahre stresses that he and his partners -- and Hinchey -- are striving for an environment that's all-encompassing. "As an all-world pub, our goal is to welcome everyone", he says. Down the line, he notes, there may also be buses that'll shuttle fans from the pub to Dick's Sporting Goods Park, where the Rapids team plays its home games.
When Armoury opens, it'll serve food and beer all day, every day, and on weekends, starting at 6 a.m. if necessary, the pub will unlock its doors for early morning games. Goal!!!!!!!!
