Maybe it's time to go back to school -- cooking school, that is. Several friends have taken classes recently, and even the kitchen-savvy veterans who have been cooking for decades have come away with new recipes and refined techniques. And when I reviewed Il Posto this week, I learned that chef/owner Andrea Frizzi also also offering cooking lessons.

Here are four upcoming classes that sound promising... See also: - Andrea Frizzi's traditional trattoria has become a Colorado classic - Behind the scenes at Il Posto - At Il Posto, the risotto is worth the wait

1) Il Posto On the second Saturday of the month, Andrea Frizzi, chef/owner of Il Posto, opens his restaurant to twelve people who are hungry (both literally and figuratively) to learn more about the show-stopping Italian cuisine his tiny restaurant is known for. Depending on the month, he covers techniques behind authentic risotto or gnocchi, first in demonstrations and then with hands-on time. Classes, which run approximately two hours, start at 10 a.m. and cost $52.80. Find more information at 303-394-0100 or www.ilpostodenver.com

2) The Seasoned Chef Cooking School To celebrate the school's twentieth anniversary, Seasoned Chef has tapped into the talent behind some of Denver's best-loved restaurants with a series called Denver's Best Chefs. Participating toques include Matt Lewis of Bones, Nelson Perkins of Colt & Gray, and Matthew Vawter of Fruition. Classes fill up quickly, so check at the end of March for the May to August calendar if the class you want is already full. Last-minute cancellations do occur, so you can always call to see if there are any eleventh-hour spots. Classes run three hours; prices vary depending on the class. For more information, call 303-377-3222 or go to www.theseasonedchef.com.

3) The Kitchen Table If you have dietary restrictions, you might assume that cooking classes aren't for you. Think again. The Kitchen Table in Greenwood Village offers two baking and eight savory classes designed especially for gluten-free guests -- though they sound so good, you might want to sign up even if you don't have Celiac disease. Coming up on February 27: Indian, with a menu including lentil fritters, Kerala shrimp curry and butter capsicum rice. The class costs $80, with a student-instructor ratio of 6:1. For more info, call 303-220-9769 or go to www.kitchentablegv.com

4) Kitchen on the Green If your baking repertoire consists of chocolate chip cookies and brownies from a box, the City of Aurora has a class for you. On Saturday, February 9, you can learn how to make treats that both you and your Valentine will love, including hazelnut panforte, walnut torte and chocolate babka. Taught by veteran instructor Gigia Kolouch, "Baking for a Winter's Day" runs from 10 a.m. to 1 p.m. and costs $60 for non-Aurora residents.
