Charlie and Pam Nathan opened the Blue Cow Eatery in Morrison in 1990, and have had a hopping breakfast and lunch business ever since. Five years ago, they added dinner service Thursday through Sunday -- but only during the Red Rocks season.

Which officially kicks off at the end of this month not with a concert, but with the sunrise Easter service on Sunday, March 31.

On the dinner menu, you'll find many of the dishes that are on the lunch menu, including fish and chips and a build-your-own burger. But there are also more upscale items, including filet mignon, chicken marsala and Red Rocks mussels.

Blue Cow's dinner season starts on Easter Sunday, when the place should be packed all day because of the sunrise service at Red Rocks.
