Colorado Springs-based Southern Concepts, which currently operates three Southern Hospitilality restaurants along the Front Range, will open Carve Barbecue at 1000 South Colorado Boulevard in the space that was formerly Bruxie. In a recent statement released by the company, CEO Mitchell Roth said that Carve "is barbecue without boundaries" and that "our menu will reflect barbecue influences from around the country."
Unlike the Southern Hospitality concept, Carve will feature a fast-casual setup where customers will have the choice of naked (the meat, not the customer), salad, sandwich or street taco. Additional toppings, sauces and sides — all scratch-made — will also be available. Southern Concepts notes that meats for Carve's barbecue will be ethically raised and produced will be sustainably farmed.
The first Southern Hospitality was opened in New York City by a group that included Justin Timberlake, but so far the other locations have all been opened in Colorado by Southern Concepts, which was co-founded by Gary Tedder, father of One Republic frontman Ryan Tedder.
