Cibo Will Put Pizza in the Former Churchill's Public House Space

had trouble getting open in a brand-new space at 16th and Boulder streets, finally making its debut in July 2013 after a flood from an upstairs apartment delayed construction. But that was just the beginning of the bar's woes. Despite LoHi's reputation as a hot restaurant neighborhood, Churchill's had trouble attracting customers. Part of the problem could have been confusion with Churchill Bar in the Brown Palace, although there was little resemblance beyond the name: Churchill in the Brown was usually jammed — and this place never was.  Public House finally gave up the ghost and quietly closed last Labor Day weekend.

Now the place finally has a new tenant: Big Eats Restaurant Group, the company that owns Margs World Taco Bistro, with three locations in Denver and one in California. But rather than put another  taco joint in the space — which happens to be across the street from Lola Mexican Fish House, which serves some mean tacos itself — Big Eats will try out a new concept here. Five months ago, managing partner Tony Walker told Mark Antonation that he and his partners planned to not just  expand the Marg's brand, but introduce two restaurant concepts: a ramen noodle bar called Slurp and a wood-fired pizzeria called Una, which will also serve craft beer.

The beer remains in the current concept, but the restaurant is now called Cibo, and just advertised for front-of-the-house staff with this:
Cibo is a fresh new concept opening in the Lower Highlands. Centralized around hand stretched, Caputo flour neopolitan style pizza and a great bar program, Cibo will offer a relaxed community atmosphere with a higher level of service and attention to detail.

We will be offering crafted cocktails, an array of tap and bottled wine and a fine selection of craft beers. Our kitchen will be using high waulity ingredients and will be offering daily specials with an ever evolving menu. The ability to learn and convey to your guests the flavors on our menu and specials will keep you challenged.
