Since then, she's been franchising, expanding into four privately owned locations across the Front Range. And now she's just opened another outpost in Littleton under a different name: Delvickios.
Vick gave the Main Street space a makeover to capture a homey Italian feel, building out a bar and bedecking the place with a red-and-gold color scheme and red-checkered tablecloths.
The newest eatery in the family of restaurants features a similar menu to its siblings, dishing up pasta, pizza and calzones with a few new items unique to that restaurant, including Archobellino Piatto, a combination of sauteed chicken, roasted red bells, onions and sundried tomatoes with radiatorre pasta.
Vick owns this first Delvickios, and she'll also expand her future franchise operations under that name, rather than Pinocchios, for interested restaurateurs.
The eatery, which has a full bar, began serving lunch and dinner earlier this week.
