Chef Ryan Leinonen will host a Finland-themed dinner at Trillium beginning at 7 p.m. tonight. "Food from Finland tends to be more rustic, simple and peasant-like than the other Scandinavian countries," the chef says.

"The Finnish people are steeped in culinary tradition, relying heavily on smoking, salting, curing and frying fish, and because the growing season is short," Leinonen continues. "There are always a lot of root vegetables involved -- and ingredients like potatoes, turnips and carrots will play a big part in my Finnish dinner."

The menu includes four courses, all paired with wines, for $70 per person, excluding tax and gratuity. This event is part of Leinonen's ongoing Scandinavian dinner series; make a reservation by calling 303-379-9759.
