And earlier this week, I went back to feast on a wide selection of dishes, which owner Tom Ryan describes as "familiar food with modern twists and turns." And he's right -- the menu trots through burgers and burritos, tacos and salads, pho and pancakes, and while a menu of this magnitude can be intimidating, it's well thought out, and far shorter, admits Ryan, than when he first designed it. "The menu started out 300 times larger than what it is now, but we whittled it down based on consumer feedback and what the kitchen staff could handle," he explains, adding that he's "bringing everyone's favorite foods under one roof."

Housemade corned beef hash Benedict draped with scratch-made hollandaise and sided with a simple salad with oven-roasted tomatoes. Boulder club sandwich, smeared with mayo and stacked with house-roasted turkey, havarti cheese, avocado, cucumbers, butter lettuce and tomatoes on wheat bread. A trio of tacos: adobo chicken, Korean carnitas and sweet-chile chicken. Truffle aioli and roasted crimini mushroom burger with fresh baby spinach and Swiss. Tom's flatbread pizza topped with candied walnuts, fresh figs, sliced apples, fresh thyme and goat cheese. The "Midnight slopper" a buttered burger smothered with green chile (excellent, by the way), cheddar and Jack cheeses, queso fresco, cilantro and pico de gallo -- and buried beneath is a brioche bun. Char-grilled chuck tender pooled in a pan sauce of shallots and mushrooms and accompanied by your choice of two sides, in this case, the shaved Brussels sprouts and sweet corn with goat cheese, green chiles and cilantro. Tom's red chile, green chile and warm tomatillo salsa. Chicken pho with accompaniments, including blue corn-fried tortilla strips, carrots, red cabbage, radishes, lime wedges, cilantro and green onions.
