The Spicy Pickle is still deserted, but the Cava Greens space, 827 Colorado Boulevard, will soon become Four G's, a Mexican restaurant that's been turning out burritos and tacos at 2788 Federal Boulevard (there's also a second outpost in Littleton), since 1994.
"Our dad looked at this very same space many, many years ago when he wanted to open a restaurant, but at the time, he didn't want to take a risk, but we've been looking around for a third space, and we actually like what's going on with the neighborhood, so we're taking a chance," says Hugo Gonzalez, who will run the restaurant with his brother, Cesar.
The menu, which Hugo calls "family recipes from Guadalajara," will mirror that of the other Four G's restaurants, and the space, while significantly smaller than the Federal store, will stay true to the family's no-fuss philosophy. "This will be a very laid-back, very casual restaurant that doesn't do anything fancy," Hugo insists. "All we want to do is serve the community here the same way that we have on Federal. We just want to make people feel at home and happy with our food."
The brothers hope to unlock the doors to the public on July 5.
