It is never too late to learn how to cook, and Dan Witherspoon -- executive chef and director of the Gourmet Spoon and the Seasoned Chef Cooking School -- will show you the ropes in his two-part class, Basic Skills Every Cook Should Know, that starts today at the Seasoned Chef. In addition to teaching healthy alternatives, Witherspoon will demonstrate essential culinary techniques such as knife skills, sauteing, roasting, grilling, sauce-making, pastry skills and more.

Need more incentive to get back to school? Here's the lineup of dishes you'll be making:

Workshop 1 Field Greens with Champagne Vinaigrette; Triangle Tip Roast with Roasted Mushroom and Shallot Ragout; Sautéed Filet of Salmon with Aioli; Rice Pilaf; Broccoli with Lemon Browned Butter; and Rustic Apple Crostada with Vanilla Crème Anglaise.

Workshop 2 Minestrone with Basil Pesto; Classic Caesar Salad; Braised Pork Shoulder Ribs; Creamy Polenta; Perfect Roasted Chicken with Mushroom-Marsala; Asparagus Butternut Squash and Roasted Red Pepper Medley; and Lemon Mousse.

Part one of the cooking lesson will take place tonight from 6 to 9:30 p.m.; part two will be held the following Tuesday, December 10). Tuition runs $155 per person for both sessions and can be purchased online here.
