And in the company as such renowned spots as the French Laundry, San Francisco's Quince, Philadelphia's Vetri and New York's Eleven Madison Park are a couple of Colorado spots who make excellent noodles.
Frasca Food and Wine got the nod for its white pork ragu, which is a favorite of California chef Michael Chiarello's. That rich sauce is made of pork shoulder and rosemary and overlaid with strips of glistening lardo when it gets plated.
We also noted our fondness for a variation of that ragu when we listed our favorite pastas in Denver, asking for reader input in our quest to name the top noodles. And another of our picks also made the Grub Street cut: the cavatelli carbonara at Fruition, which was one of 100 Favorite Dishes in 2010. That dish, which has graced the restaurant's menu since the place opened, is simple and spectacular, flawlessly executed every time.
