At the end of February, Ian Clark, chef-owner of Bru Handbuilt Ales and Eats, told us he'd be opening a new ice cream shop called Heifer and the Hen next door to his brewery-restaurant on Arapahoe Avenue in east Boulder. Clark is a self-professed ice cream addict who had already been making the frozen treat at Bru, often using his own beers as ingredients; over the weekend, he unveiled Heifer and the Hen.

The shop  has a menu of twenty organic ice creams, eight sorbets (and other dairy-free blends), ice cream sandwiches, popsicles and housemade sodas. Look for intriguing flavors like whiskey ginger, goat-milk cajeta and mint-basil bitter chocolate, along with Belgian waffle and "banh mi" dessert sandwiches. Many of the flavors will rotate as seasonal ingredients become available. Heifer and the Hen is open daily from noon to 9 p.m.
