We're winding down to the final installments of our 100 Favorite Dishes, with only one left for 2015. For No. 2, we enjoyed a seafood bite at Genesee Park's Hideaway Kitchen + Bar . The Hideaway is one of a growing number of destination eateries along the Interstate 70 corridor that's being revitalized to draw guests from Denver as well as nearby mountain communities. In Idaho Springs, the historic Buffalo Restaurant & Bar, which has operated under different names since at least 1906, closed more than a year ago for renovations and finally reopened this week. One of the modifications is a new entryway to the Westbound & Down Brewing Company next door; the Buffalo's bar will also serve the brewery's beers on tap. And in Evergreen, the El Rancho Restaurant, which originally opened in 1947 and closed three years ago, is open once again as El Rancho Brewing Company with several house beers on tap and food from chef/butcher Thomas Vincent.
