"There are a lot of new restaurants in Cherry Creek -- the area has a good vibe -- and we're going to add to that by opening a place that's a far less expensive alternative to what people are accustomed to in Cherry Creek," says Bryan Brutsch, the GM of the original Margs Taco Bistro, at 1519 Wynkoop Street. "It's important to us that we're family-friendly, and that we have a family-friendly price point."
The downtown, taco-centric menu will travel to Cherry Creek, although Brutsch says that Creekers can expect more variety. "The plan is to have a slightly expanded menu with more appetizers, salads and tacos and an expanded wine list," notes Brutsch, adding, too, that the Cherry Creek location will also serve brunch until 3 p.m. on the weekends.
Brunch will start even sooner downtown -- on January 21. "We're doing a bunch of different breakfast tacos, huevos rancheros and really, really good chilaquiles," says Brutsch. And when the Cherry Creek store opens, it'll pimp brunch from day one, not to mention its terrific house-infused tequilas, which Margs will be pouring if its liquor license application is approved on February 9.
