"We haven't completely decided on a name yet, but there are dozens of suggestions on our Facebook page, and we should have one solidified by next week," reveals Cassidy Tawse-Garcia, who does public relations for the Mountain Sun Pub and Breweries.
But owners Kevin J. Daly and Paul Nashak, she says, definitely have a concept. "It's going to be an evolved mission from the group of Mountain Sun Pubs that people have come to know and love, but this will be a tap house that's more food-focused and family-friendly," explains Tawse-Garcia, adding that the 5,000 square-foot space will lay claim to a wood-burning oven, where, she says, the kitchen will produce dishes like roast chicken with roasted vegetables.
In addition, notes Tawse-Garcia, the tap house's beer handles will outnumber those of the other pub locations, thanks to a new brewery license at Vine Street Pub, in Denver, which now has the capability to brew 48 kegs of beer each day. "The new brewery at Vine street will allow them to double production during their first year and make twice as much beer -- 48 barrels a day -- and the tap house will benefit from that," she says, by offering up to 31 tap handles, eight to ten of which will be guest beers, while the remaining handles will pump out Mountain Sun suds. Tawse-Garcia also divulges that the tap house will feature the pub's signature margaritas on tap, as well as tap wines, some of which will be local.
The menu is still being created, but Tawse-Garcia divulges that diners can expect a "seasonally changing" lineup of flatbreads and family-style dishes. "We've always had great food in all of the pubs, but we're taking the vibrancy of that food and elevating it to add more variety, and all of it will pair very well with matching beers," she says.
"Kevin and Paul really want to offer another great restaurant for south Boulder -- they love that community -- and they're really excited for this new opportunity, which will offer a comfortable living room environment with couches, a fireplace and an open kitchen where conversation flows," explains Tawse-Garcia, adding that the tap house will be open seven days a week for lunch and dinner.
