Pink Hooter cupcake for a cause

The Candy Girls were systematically working our way around the chocolate shops, bakeries and specialty candy makers of Denver when we stumbled upon Big Fat Cupcake, 129 Adams Street. While the uniquely flavored, award-winning cupcakes drew us in, it was shop-owner Kathleen Nevin's mission to donate 10 percent of her shop's profits to help men and women who have been diagnosed with cancer and can no longer afford to pay their mortgage or rent that really piqued our interest.

Turns out, Nevin is a breast-cancer survivor who offered to let us help create a special, limited- edition "celebrity" cupcake for the month of April. With the help of talented baker Kristin Snow, we created the Pink Hooter -- a vanilla cupcake filled with pomegranate cream, topped with pink buttercream frosting and a cherry -- that's fashioned after the Pink Lady, that classic cocktail.

Since both Aubrey and Liz are members of the Denver chapter of LUPEC (Ladies United for the Preservation of Endangered Cocktails), whose annual Breakfast for Boobs breast-cancer fundraiser will be held from 5 to 8 p.m. on Sunday, April 26 at Hot Cakes Diner, 1400 East 18th Avenue, we thought a LUPEC tie-in would be fitting. We wanted a cupcake modeled after a cocktail that would also make an unusual and delicious baked treat.

The pomegranate cream, created from pomegranate juice that's been boiled down into a syrup and mixed into whipped cream, is light, tart and a perfect fruity complement to spring. The rich, buttery frosting and red cherry on top really help to make this cupcake something special, if we do say so ourselves.

The Pink Hooter can be found at Big Fat Cupcake through April. While you're there, be sure to try the shop's other specialty cupcakes flavors, including like Creamsicle and Monkey Love (banana cake with cream cheese frosting).
