Variety was the theme for July's restaurant and bar openings, with big-name local restaurateurs adding to their collections, out-of-town chains moving in, and intriguing new international eateries popping up.

Chefs Paul Reilly and Troy Guard unveiled the Italian-themed Coperta in Uptown and the rotisserie/raw bar/seafood specialist Mister Tuna in RiNo, respectively. MillerCoors threw its enormous hat into the brewpub ring with the spacious Blue Moon Brewing Company at 38th and Chestnut streets in a neighborhood already saturated with suds. Even musician Nathaniel Rateliff got in on the act, teaming up with a few service-industry pros to open a new bar and eatery called the Overland on South Broadway.

On the global scene, we welcomed the Bronze Empire, serving Chinese hot pots and ramen sandwiches on South Colorado Boulevard; the chic and modern Citizen Thai Bistro in Golden; and Latigo, a new Ballpark neighborhood restaurant featuring regional Mexican cuisine from chef Ignacio Leon, who sadly closed Sunnyside's Paxia at the end of the month.
