Two weeks ago today, the space finally reopened as Rooster & Moon Coffee Pub. The emphasis is on coffee right now, since the place is open from 6 a.m. to 6 p.m. weekdays and 6 a.m. to 2 p.m. weekends, but it's very good coffee: artisanal roasts from Thornton-based Allegro. There are also teas from Vail Mountain Coffee and Tea, as well as baked goods from Michael Bortz's City Bakery.
"What we're trying to do is provide a place that gives people what they need no matter what time of the day it is," says Nicholas Bode, who opened the place with partners Jason Calloway, Jamie Britt and Stephanie Gaddy. "In the morning it might be a latte, a sandwich during lunch, a cocktail after work, or free wi-fi and great music all day. On the weekends, it might be a Bloody Mary or a waffle or just a place to hang out with your friends."
But don't look for that Bloody Mary yet. "We haven't gotten the full bar set up," Bode admits. "We have some beer, we have some wine." And while the Stewart's did leave some alcohol behind, "the guys doing the demolition would steal it," he adds. "And we're not talking high-quality stuff."
Once the bar is fully stocked, Rooster & Moon will expand its hours -- and into the "pub" portion of its name. And in the meantime, the coffee's on. For more information, call 303-993-2622 or go to www.roosterandmoon.com.
