Wolkon and his team, which also includes Jeff Bustos, now have a third project in the works: They've just signed a lease on the old Storz Garage and Preferred Transportation building, at 17th and Pennsylvania, and they'll be building it out into a restaurant that will complement the vibe of Steuben's, which sits directly to the east.
Details are still sparse on the new restaurant concept, but Wolkon will divulge that the massive building will include additional kitchen space for Steuben's, a restaurant and bar, a 3,000-square-foot patio and a ping-pong hall, which should be especially exciting for anyone following our hipster's guide to sports.
He also says that Selby and Biederman, executive chefs at Vesta and Steuben's, respectively, are collaborating on the menu.
The partners are currently obtaining permits to begin their project, which will involve a major overhaul of the space to outfit it properly to serve food. As such, there's no opening date on the calendar -- but it's likely to take several months to get up and running.
