Trillium Space to Become Aloy Modern Thai

When Trillium closed on Larimer Street at the end of September, it skewed the dining scene away from chef-driven quality to bro-friendly bar-and-grill fare. But a new tenant has already claimed the space, and promises to bring something new to the neighborhood: The owners of Aloy Thai Cuisine in Boulder have a modern Thai concept that will debut there around  February 1.

Owner Bo Bean says her new eatery, to be called Aloy Modern Thai, will feature a more modern fusion menu rather than the traditional Thai dishes her mother prepares at the Boulder restaurant. And since her mom can't be in two places at once, Bean has hired a new chef who is coming from London to add a contemporary twist to the cuisine.

"It will be something different and unique," Bean explains. "Sustainable, enjoyable and obtainable — those are the words we're using." And by that she means that Aloy will source vegetables from local farmers' markets and will serve only all-natural, hormone-free meats, but that customers will still find reasonable prices.

The next few months will be spent adding warm, traditional Thai flourishes to the dining space, which previously featured a sleek, austere ambience suited to its former occupant, a Scandinavian restaurant.

Boulder's Aloy Thai opened in 2013 after a rename and remodel from Chy Thai under the same ownership.
