Co-owner Jasmine Spoonemore says Waffle Up should open in December, initially from 7 a.m. to 3 p.m. daily. The menu will be an expansion of the current food-truck offerings, with sweet and savory favorites like salted caramel and banana, bacon maple and brie and pear, but also with a new risotto oatmeal, yogurt parfaits and a tomato salad waffle -- Spoonemore says tomatoes are a natural with the dense, sweeter, Liege-style dough.
She and co-owner Tom McCarty plan to keep the truck running, serving waffles for private events and in the same downtown locations that customers return to: 16th and Wazee, the Old Pearl Street Farmers' Market.
The two are excited to be opening in Baker. "We met with the neighborhood association and they are excited, too," Spoonemore says, adding that "it was love at first sight" when she first saw the interior of the former pie shop. Neighbors can look forward to a few soft-opening events in December before Waffle Up opens its doors officially.
