The cuisines of Israel and other regions of the eastern Mediterranean have become a bona fide trend across the U.S. — primarily because chefs are giving us a delicious new look at familiar foods such as hummus, pita, falafel and baba ganoush while introducing flavors less familiar to American palates. Ash'Kara opens at 2219 West 33rd Avenue on Wednesday, December 19, where executive chef Daniel Asher's menu will offer a taste of Israel using fresh ingredients and time-honored techniques — the way food has been made in the country's markets, cafes and restaurants for generations.
