Number 63: Whiskey-braised beef from Steuben's

Oh, baby, it's cold outside, which gives us the perfect excuse to slide through the doors of Steuben's to chase away the chill with a half dozen figgy Manhattans and the whiskey-braised beef, a new addition to Brandon Biederman's board that should be emblazoned with the words, "How do I love thee? Let me count the ways." First, it's the consummate cold weather dish, all brazenly beefy, spiked with liquor, wickedly rich and determinedly calorie unconscious. Second, the billow of grits, all cheesy and butter-soaked, are textbook perfect. And third, it all comes crowned with collards, the slightly bitter, leafy greens gloriously porky with little bits of bacon. Let us bow in gratitude.
