Big news on the street food front: Come May, Boulderites will be introduced to a new Pepto-Bismol pink truck wheeling around their 'hoods. "We're going to paint it really, really, really pink; you're definitely going to want to get your tacos from our truck," says Rayme Rossello, who's calling her new Boulder-based restaurant on wheels "Comida."
"We wanted to go to where the people are, and in order to do that, it helps to be mobile," says Rossello, who started the homegrown Proto's pizza chain with co-owner Pam Proto back in 1999. She sold her ownership to Proto in 2007, in part, she says, because she wanted to work on developing the concept for her mobile vehicle. "Pam and I had the best business relationship ever, but it was just time for me to move and do some different things, like a food truck," explains Rossello, who plans to "offer slow-cooked, traditional Mexican food using fresh ingredients and artisanal preparation methods."
The menu, which is all Mexican street food, pimps gorditas and tacos on handmade corn or flour tortillas, whole roasted chickens, quesadillas, breakfast burritos and huevos rancheros -- "when we're up and out early enough" -- several salsas and a raft of side dishes, including pickled vegetables, orange-jalapeño slaw, sweet potatoes with smoked Gouda and Have'A corn chips, which are the best pre-packaged tortillas chips that'll ever pass your lips.
Rossello hopes to have the wheels up and rolling sometime during the second week in May -- right around Cinco de Mayo. As for expansion into Denver, Rossello says that she's focusing on Boulder for the first year, but not to rule out a second Comida truck in Denver. "We're going to take our time with this and see how it goes in Boulder first, but we definitely want to add more trucks, and it's possible that one of them will be in Denver," she says.
