While the restaurant has been serving up Venetian fare since 1998, about a year ago, Italian-born Fabio Flagiello took the top toque, putting a more traditional bend on the menu, and while he's implemented menu changes at Bácaro before, he explains why this is something more: "Basically, we are changing the regular dinner menu to small plates," Flagiello says. "We'll still have pizzas, but everything from appetizers, salads, soups and pastas will be small plates."
The chef kind of understated the fact that the menu will boast eighty-five small plates -- a very bold move for an average-size kitchen. What spurred the change? A response to the tendencies of Boulder shape-conscious eaters, along with a return to a more traditional Venetian setting.
Flagiello says that a "Bácaro in Italy is a little mom and pop and not really a restaurant. It's just kind of a bar with a few tables, food on the counters, a little menu and some house wine. This concept fits better with Boulder's community because people are so aware of what they eat."
"No one wants to eat huge meals anymore," he adds. "To me, it's a very old way to eat, but a new generation is looking for something in the direction of eating food to share as an evening out."
There will be cured meats, too, procured from Il Mondo Vecchio in Denver. Very few places in Boulder have salumi from Chef Mark DeNittis on their menu, so that alone is reason enough to stop by when the new menu rolls out.
The late-night bar at Bácaro will stay the same; hours are from 4 to 10 p.m nightly, with a happy hour from 4:00 to 6:30 p.m. New menu items will range from $3to $14.
