Next week, Wade Gunn is heading to Texas to buy a truck. But not just any truck: The executive chef ofBrasserie Felix
, the French-food temple at 3901 Tennyson Street, is gunning for a truck that's eighteen feet long and comes equipped with a full kitchen -- a kitchen on wheels that will turn out steak frites in Denver, Boulder, Evergreen, the Tech Center and wherever else Gunn can gather a crowd.

A former manager of the Trinity Grille, Gunn is no stranger to peddling food from the pavement, having spent nearly ten years pimping turkey legs at the Taste of Colorado while working at the Trinity. But you won't see turkey legs on the Brasserie Felix board. "We're going to offer the restaurant's full French lunch menu from the truck, as well as four different French-cut steaks, including a hanger steak, flat iron, filet and strip, all served with frites," says Gunn, who promises that the "steaks are so tender, you can cut them with a plastic spoon," thereby eliminating the need, apparently, for restaurant silverware.
Gunn, who plans to hire a chef de cuisine to oversee the kitchen at Brasserie Felix, contends that the food truck, which he'll manage, has the same capabilities as the restaurant kitchen. "It's got a four-burner kitchen, a 24-inch griddle, and honestly, it's better than the kitchen at the restaurant," he insists. "Basically, I'll be able to handle the restaurant volume out of the truck."
His goal is to launch the truck during the Sunnyside Music Festival, on Saturday, September 11. After that, the kitchen on wheels will cruise around the Denver metro area, Boulder and Evergreen. "The grand plan is to serve lunch Tuesday through Friday, deliver pre-ordered, prix fixe corporate lunches during off times and, in the middle of the afternoon, deliver food to some of the senior citizen centers near Brasserie Felix," explains Gunn, who also wants to add a truck brunch. "I'd love to do a Sunday brunch -- Red Rocks would be great for that -- but that's a ways down the line."
When the truck starts motoring around town, Gunn will turn to Twitter and Facebook to let Francophiles know of its whereabouts. I'm excited to get this thing up and running and go off-site," says Gunn. "We'll be serving our great French classics wherever the people want us to be."
