Chia's Breakfast & Lunch Counter is set to open next week in Golden

"We just got our certificate of occupancy thirty minutes ago; we're drinking cheap champagne and PBR as we speak to celebrate," says Eric Chiappetta, who owns Chia's Breakfast & Lunch Counter with his fiance, Jamie Gulick.

The couple took over the space at 16400 South Golden Road in Golden that was formerly home to Tatum's Touch of Philly earlier this year, and will "casually" open the doors next Tuesday.

"We're going to have classic American sandwiches -- meatloaf, Chicago beef, cheese-steaks, Reuben -- but done right," explains Chiappetta. "We both have backgrounds in fine-dining, so we wanted bring that attitude to our own restaurant."

Chia's will be open during the week from 6 a.m. to 6 p.m. and on Saturdays from 9 a.m. to 2 p.m. Check out the menu here.
