Will and Coral Frischkorn opened Cured on the east end of the Pearl Street Mall in 2011 with a goal of bringing imported and domestic artisan cheese to Boulder. Cured is much more than a cheese shop, though, with a specialty market in the front for high-end pantry items, a deli counter for sandwiches and salads, and a full kitchen in the back for takeout dinner specials and catering orders. With so much going on in one small space, the couple decided to expand and will open Cured West today at 10th and Pearl streets on the opposite end of the mall.
Cured West is a smaller space than the original, so market items are limited — but single-origin chocolates are a big part of the display, along with line-caught canned tuna, sauces, dried pastas and Colorado-made cocktail ingredients. There's also a deli counter where sandwiches are made to order and wrapped to go (there's no seating inside). The sandwich roster includes a rotating selection of four styles: one each of savory, veggie, sweet and grilled cheese. Pre-made salads, two soups daily and beef-bone broth from Western Daughters Butcher Shoppe round out the menu.
Coral Frischkorn explains that she and Will chose the location for its proximity to several offices and hotels in the area. There's also a new office building going up across the street with room for 800 employees.

The neighborhood is in need of quick, high-quality lunch options for Boulderites on the go, she points out, adding that Cured West will also offer catering and picnic baskets for those who want more than just a sandwich.
Like Cured, Cured West is a shared space, with the Frischkorns' market on the left, the deli at the back, and a separate flower and plant shop called Fawns Leap Botanical Arts on the right. Unlike the original shop, the new location will not have coffee and espresso drinks, since that aspect is handled by Boxcar Coffee Roasters, which shares space with Cured. Bottles of Boxcar's cold-brew coffee will be available at the new store, however, along with a variety of other local beverages.
Cured West is open from 10:30 a.m. to 6 p.m. Monday through Saturday and 11 a.m. to 5 p.m. on Sunday.
