Dish, Westword's eighteenth annual food-and-drink festival in Sculpture Park at the Denver Performing Arts Complex, is only hours away and our mouths are watering just thinking about all the delicious eats that will be featured there.

What dish will you be serving at Dish? Three items: grilled bacon and jalapeno taco with Asadero, cotija and smoked Gouda; sirloin taco: sirloin over sweet potato mash with roasted onions and house-made crema; roasted poblano and onion quesadilla: griddled with Asadero, cotija and smoked Gouda.

What dish will you be serving at Dish? We will be serving our wood-fired pizzas from our hand-built wood-burning truck. We have three main slices: the Margherita, the Safety (pepperoni) and our signature Sweet Thai Chili Chicken.
What's your favorite dish on your menu? I'm a "meat-reducer" and my brother's vegetarian, so we do a lot of our Hot Hawaiian (pineapple and jalapeno) or a twist on the Buffalo Chicken with "Buffalo" mushrooms and artichokes. One of our managers came up with the Falafel pie recently, which was smash hit!Restaurant: Watercourse Foods
