sizzling platter of carne adobada fajitas

that you can only get at

(as far as I know), to a

redneck omelet with Texas toast

from an unidentified hash house that's been around for decades, to

a blistering cast-iron skillet sputtering with Santa Fe-style stacked enchiladas

smothered in red and green chile. Those enchiladas made my week.
