Jensen Cummings Brews a Beer-and-Food Pairing Dinner at Highland Tap Tonight

Tonight, Jensen Cummings of Brewed Food is taking the beer-and-food-pairing concept to another level. Along with chef Elijah Odell of Highland Tap and Burger, he'll prepare a Brewed Food dinner at Highland Tap, with each course incorporating actual ingredients from New Belgium Brewing Beers (yeast, wort, barley, hops). The meal will include four courses and an appetizer during the reception, as well as six New Belgium brews.

Diners can dig into dishes like barrel-smoked trout rillette with spent-grain flatbread and orange-peel crème fraiche; pork-belly bugolgi with yeasted kimchi and dry-hopped sriracha; spent-grain bread pudding with blackberry barleywine poached pears and hoppy pine-nut brittle; and more. The dinner is part of a Brewed Food Tour, which will also pop up at Harman's Eat and Drink on February 11, and Rebel Restaurant on February18.
