The Larkburger burger has come a long way since it was first featured on the bar menu ofLarkspur Restaurant
in Vail. In fact, that burger has proven to be the sandwich that launched a thousand ships. Or at least four.
Tomorrow, Larkburger will open its fourth restaurant in Fort Collins, at 2539 South College Avenue. To celebrate, the restaurant will be offering $2 burgers -- any burger from the menu -- all day long. Burgers start at $5.75, so it's pretty much a steal.
Why Fort Collins? According to Tim Barnes, the new restaurant's general manager, it was kind of a no-brainer. "It's just such a cool little city, and we thought the market would really take to us," he says." We found a great spot and here we are."

The Fort Collins menu will mirror that of its three siblings, with all-natural Angus beef burgers, truffle Parmesan fries and Breyer's milkshakes; Barnes says the ahi tuna burger has been gaining quite a bit of traction as well. The entire menu, save the regular bun, is gluten-free and nut-free.
Barnes says we'll see more Larkburgers in the near future, including another one in Denver sometime within the next year, as well as others in the state following that.
Larkburger's other three outlets are in Boulder, Edwards and the Denver Tech Center. The homegrown chain is operated by president Adam Baker and chef/owner Thomas Salamunovich. Salamunovich is also behind Larkspur Restaurant and Avondale Restaurant in Avon.
