I'd heard that Colt &Gray, the new gastropub at 1553 Platte Street, was opening for lunch today, so on Saturday I made a reservation for 1 p.m. today using Open Table. But last night, I received the following voicemail message: "Hi, this is Nicole over at Colt &Gray.... Unfortunately, we are unable to start lunch tomorrow, but we will be starting lunch on Tuesday. If you would call back we would be happy to provide first priority seating for lunch on Tuesday. We look forward to seeing you back here again soon. Sorry again, and thanks."
That's straight from the horse's mouth. I'm curious as to why Colt & Gray needed the extra day, but considering the challenges it faced between its original opening date in May and when it finally opened (to raves) on August 18, waiting until Tuesday for lunch seems a small price to pay.
