The first
Modmarket opened in 2009 in Boulder, a town that seemed ideally suited for its seasonal ingredients and farm-to-table philosophy set off by a sleek, fast-casual setting. But in the three years after that, owners Rob McColgan and Anthony Pigliacamto opened three more stores in metro locations that were just as responsive to the concept: at
14630 West Colfax Avenue in Lakewood,
1000 South Colorado Boulevard in Glendale and
8575 East Arapahoe Road in Greenwood Village. And now, in the next four months alone, the partners plan to open three more -- including a downtown spot.
