Matsuhisa opened in Cherry Creek this spring, and when chef/founder Nobu Matsuhisa was at the restaurant earlier this month, Gretchen Kurtz met with him for this week's Chef and Tell. This is the third Matsuhisa in Colorado, and the group of restaurants is continuing to grow as it approaches its thirtieth anniversary, attracting fans around the world. Fans like Amy, who says of the Denver location:

OMG!! YES! Yes!! I drove by it the other day and almost wrecked staring at it.

Adds Blair:

I had just about given up on the Cherry Creek dining scene — and then Matsuhisa opened. Yes, it's expensive, but when you balance that with the Cherry Cricket, the neighborhood now has all the restaurants I need.
