Reader: Lon Symensma is exactly what Denver needs

In the meantime, ChoLon chef/owner Lon Symensma is dishing up stories of his own in the current Chef and Tell interview, which inspired this comment from Bsquared:

Chefs like Chef Symensma are EXACTLY what Denver needs, and this is what puts Denver on the culinary map. An amazing pedigree at such a young age, I can't wait to see the full impact of his presence in the Denver food scene.
