Think you want to open a restaurant of your own? Well, before you get too excited, I suggest you check out djscafe.blogspot.com -- a website that Jason Stallings put together to detail every phase of the construction at DJ's Berkeley Cafe and all the nightmares that went along with it. It is a beautiful (and I would hazard to say, fairly typical) document of exactly what it takes to rehab a space into a suitable restaurant and covers everything from laying concrete and hanging drywall to where to pick up cheap coolers and what to do with the toilet in the office.
